Job Description

We are seeking a talented and detail-oriented Poissonnier to join our restaurant kitchen. This role is ideal for a chef who is passionate about seafood preparation and takes pride in delivering exceptional quality with every dish. Working alongside an experienced culinary team, you will be responsible for preparing, cooking, and presenting a wide variety of fish and seafood while maintaining the highest standards of food quality, cleanliness, and consistency.

Responsibilities

• Prepare, portion, and cook a variety of fish and seafood dishes to established recipes and standards.
• Inspect seafood deliveries to ensure freshness, quality, and proper storage.
• Clean, fillet, debone, and portion fish with precision and minimal waste.
• Maintain the seafood preparation station in a clean, organised, and food-safe condition.
• Monitor stock levels and notify the kitchen leadership of replenishment needs.
• Ensure all seafood is handled, stored, and prepared according to food safety regulations.
• Work closely with other kitchen sections to ensure smooth and timely service.
• Assist with menu development by suggesting seafood dishes and seasonal specials.
• Minimise food waste through effective portion control and inventory management.
• Support junior kitchen staff by sharing knowledge and promoting best practices.

Qualifications

• Proven experience as a Poissonnier, Fish Chef, or in a similar seafood-focused kitchen role.
• Strong knowledge of fish species, seafood preparation techniques, and cooking methods.
• Excellent knife skills, including filleting, trimming, and portioning seafood.
• Understanding of food safety, hygiene, and sanitation standards.
• Ability to work efficiently in a fast-paced restaurant environment.
• Strong organisational and time management skills.
• Ability to work collaboratively within a professional kitchen team.
• Culinary training or relevant professional kitchen certification is an advantage.
• Passion for producing consistently high-quality seafood dishes with attention to detail.
