Responsibilities

• Prepare, clean, fillet, portion, and cook a variety of fish and seafood dishes.
• Ensure seafood is stored, handled, and prepared according to food safety standards.
• Inspect seafood deliveries for freshness and quality.
• Develop and present seafood dishes that align with the restaurant’s menu and quality expectations.
• Maintain consistency in taste, presentation, and portion sizes.
• Coordinate with the Head Chef and kitchen team to ensure smooth service.
• Monitor seafood inventory and communicate stock requirements promptly.
• Minimize waste through proper preparation and storage techniques.
• Keep the seafood preparation area clean, organized, and compliant with hygiene regulations.
• Assist with menu planning and seasonal seafood specials when required.

Qualifications

• Proven experience as a Poissonnier or in a dedicated seafood preparation role within a restaurant.
• Strong knowledge of seafood species, preparation methods, and cooking techniques.
• Skilled in filleting, portioning, and handling a wide variety of fish and shellfish.
• Understanding of food safety, sanitation, and hygiene practices.
• Ability to work efficiently under pressure while maintaining high standards.
• Excellent knife skills and attention to detail.
• Strong teamwork and communication skills.
• Culinary training or relevant professional certification is an advantage.
• Passion for delivering exceptional seafood dishes and continuous improvement.
