About the Role

As a Poissonnier, you will oversee the fish and seafood section of the kitchen, ensuring every dish meets high standards of freshness, flavour, and presentation. You will work closely with the kitchen team to maintain efficient operations while upholding food safety and hygiene standards.

Key Responsibilities

• Prepare, portion, season, and cook a variety of fish and seafood dishes.
• Inspect seafood deliveries to ensure freshness and quality.
• Clean, fillet, and portion fish according to menu specifications.
• Maintain the seafood station in a clean, organised, and efficient manner.
• Monitor stock levels and communicate replenishment needs.
• Follow standard recipes and presentation guidelines consistently.
• Ensure compliance with food safety, sanitation, and hygiene regulations.
• Assist with menu development by suggesting new seafood dishes and specials.
• Minimise waste through proper handling and storage of ingredients.
• Work collaboratively with chefs and kitchen staff to ensure timely service.

Qualifications

• Proven experience as a Poissonnier or in a similar seafood preparation role within a restaurant.
• Strong knowledge of fish species, seafood preparation techniques, and cooking methods.
• Skilled in filleting, portioning, and handling a wide range of seafood.
• Understanding of food safety, hygiene, and sanitation standards.
• Ability to work efficiently under pressure in a busy kitchen.
• Excellent attention to detail and commitment to quality.
• Strong teamwork and communication skills.
