Are you passionate about preparing exceptional seafood dishes with precision and creativity? We are seeking a skilled Poissonnier to join our restaurant kitchen. This role is ideal for a culinary professional who takes pride in selecting, preparing, and presenting high-quality fish and seafood while maintaining the highest food safety standards.

Key Responsibilities

• Prepare, portion, and cook a variety of fish and seafood dishes to established recipes and quality standards.
• Inspect seafood deliveries for freshness and quality before storage and use.
• Clean, fillet, debone, and portion fish using proper techniques.
• Ensure seafood is stored, handled, and labeled in accordance with food safety regulations.
• Coordinate with the kitchen team to deliver orders accurately and on time.
• Maintain a clean, organized, and hygienic workstation throughout each shift.
• Monitor inventory levels and communicate stock requirements to the Head Chef.
• Minimize food waste through efficient preparation and proper portion control.
• Assist with developing seasonal seafood specials and menu improvements.
• Follow all health, safety, and sanitation procedures consistently.

Qualifications

• Certificate, diploma, or professional training in Culinary Arts or a related field is an advantage.
• Previous experience as a Poissonnier, Fish Chef, or in a similar seafood preparation role within a restaurant or hospitality environment.
• Strong knowledge of seafood preparation, cooking methods, and presentation techniques.
• Familiarity with food hygiene, sanitation, and HACCP principles.
• Excellent knife skills, including filleting and portioning fish.
• Ability to work efficiently in a fast-paced kitchen while maintaining attention to detail.
• Strong teamwork, communication, and time-management skills.
