Garde Manger

Job Description

We are looking for a skilled and detail-focused Garde Manger to join our restaurant kitchen team. The successful candidate will specialise in cold food preparation, ensuring salads, appetisers, dressings, cold sauces, pâtés, garnishes, and other chilled dishes are prepared to a consistently high standard. You will work closely with the wider kitchen team to maintain quality, presentation, freshness, and efficient service.

Responsibilities

• Prepare salads, appetisers, cold dishes, garnishes, dressings, and sauces according to established recipes.
• Arrange and present cold dishes with attention to detail and consistency.
• Prepare ingredients efficiently while maintaining proper portion control.
• Monitor the freshness and quality of chilled and perishable ingredients.
• Maintain clean, organised, and properly stocked workstations.
• Follow food safety, hygiene, and sanitation procedures at all times.
• Coordinate with chefs and other kitchen staff to ensure timely service.
• Store ingredients correctly and minimise food waste.
• Assist with menu preparation and contribute ideas for cold dishes when required.
• Maintain knives, equipment, utensils, and preparation areas in good working condition.

Qualifications

• Culinary training or a recognised qualification in professional cookery is preferred.
• Previous experience in a Garde Manger, cold kitchen, or similar restaurant role.
• Strong knowledge of food preparation, presentation, and kitchen hygiene.
• Good understanding of food safety and proper food storage procedures.
• Strong knife-handling and preparation skills.
• Excellent attention to detail and portion control.
• Ability to work efficiently in a fast-paced restaurant environment.
• Good communication and teamwork skills.
• Creativity and an appreciation for quality food presentation.
