What you will be doing:

  • Assist in the preparation and production of authentic Japanese dishes, including sushi, sashimi, tempura, grilled items, and traditional specialties
  • Support the Chef de Partie in daily Japanese kitchen operations, ensuring consistency in flavor, quality, and presentation
  • Prepare and maintain mise en place efficiently to ensure smooth and timely service
  • Follow established recipes and presentation standards while respecting traditional Japanese culinary techniques and flavors
  • Uphold the highest standards of hygiene and cleanliness in line with HACCP and food safety regulations
  • Ensure proper stock rotation and assist in monitoring inventory levels within the Japanese kitchen section
  • Collaborate closely with the kitchen and service teams to ensure seamless execution for restaurants, banquets, and events
  • Take responsibility for your section when delegated and proactively address any operational challenges during service
  • Demonstrate initiative in developing your skills and knowledge of Japanese cuisine under the guidance of senior chefs
  • Handle guest dietary requirements and special requests with care and attention to detail, delivering authentic and memorable Japanese dining experiences

Qualifications

Your experience and skills include:

  • Previous experience in a professional Japanese or Asian cuisine kitchen, preferably within a hotel or fine dining environment
  • Culinary certification or diploma in Culinary Arts or a related field is preferred
  • Strong passion for Japanese cuisine, with a keen eye for detail, authentic flavors, balance, and presentation
  • Solid organizational and time-management skills to manage mise en place and service demands efficiently
  • A collaborative team player with a positive attitude and eagerness to learn and grow
  • Good understanding of food safety, hygiene, and HACCP standards within a professional kitchen environment
